How to make stuffed peppers

Stuffed peppers are fresh, savory, and perfect for a student on-the-go to make in less than half an hour. Requiring only a few common household kitchen ingredients and leaving almost no chance for error, these peppers are ideal for a quick snack, lunch, or dinner.

Ingredients:
1. 6-8 mini bell peppers of any color
2. A wedge of fresh brie cheese
3. Basil pesto
4. 1 ripe avocado

Procedure:
1. Using a small kitchen knife, remove the tops of all the bell peppers.
2. Slice away the core and remove the seeds from each pepper. Wash the insides and outsides of the peppers with warm water thoroughly. Set aside on a clean surface.
3. Slice the avocado in half and take out the pit.
4. Cut the brie cheese in half and place the pieces in a microwave-safe mixing bowl. Melt using a microwave. Melt using a microwave, making sure to remove the cheese every 30 seconds and stir to prevent burning.
5. Scoop out the avocado and combine it with the melted brie cheese in the mixing bowl.
6. Add 2-3 tablespoons of basil pesto to the mixing bowl. Mix all the ingredients together until a thick paste is formed. Microwave the mixture for 30 seconds.
7. Spoon the mixture into the peppers until each pepper is about halfway full. Serve either cold or slightly heated.
