SEATTLE — Bordered by the Pacific Ocean, Honest Biscuits offers a view that parallels the excellence of its food. Upon entering, customers are greeted by smiling staff members and the rich aroma of caramelized butter.
We ordered three types of biscuits — a glazed blueberry-lemon, bacon lettuce tomato and fried chicken — the sweet fruit biscuit balancing the savory varieties. The glazed blueberry-lemon biscuit immediately delivered a vibrant berry explosion in our mouths. Blueberries studded the dense pastry, adding a pop of color and bright bursts of freshness. The warm biscuit achieved a perfect balance of tenderness on the inside while maintaining the satisfying outer crunch. The subtle notes of lemon also cut through the sweetness with a pinch of acidity.
On first impression, the BLT biscuit arrived as a beautifully constructed sandwich with bacon, tomatoes, arugula and mayo layered onto a butterhole biscuit. While the biscuit had a slight dryness, the juicy tomatoes and savory bacon compensated. The initial saltiness from the bacon was undercut by bitterness from the arugula, which made a flavor combination that only improved with each bite we took, though you may want to keep water nearby.

The fried chicken biscuit is exactly what it sounds like — a fried chicken thigh with a squeeze of mayonnaise and pickles placed delicately between two buttermilk biscuits. This dish elevated one of our comfort foods to a new height. The first bite showcased the delightfully crispy yet juicy chicken, but gradually, a subtle heat began to emerge, giving the sandwich an unexpected complexity.
Overall, the price was on the higher end, with our total order coming out to approximately $30. Several other biscuit places offer similar quality at a lower price. But, for those exploring Pike Place Market and seeking a satisfying meal with a touch of homemade comfort, Honest Biscuits delivers.
